Selecting the Coffee
Everything begins with green coffee. We evaluate lots for cleanliness, sweetness, structure and consistency, working with importers and exporters who can stand behind what is in the bag. A roast can reveal quality; it cannot invent it.

Understanding the Bean
Origin, elevation, varietal, processing method and harvest timing all leave their mark. A high-grown washed coffee behaves differently in the drum than a natural from a warmer valley. Reading those differences is the part that takes generations to learn.

Developing the Roast
We do not apply one profile to everything. Each coffee is roasted to highlight its own character — sweetness developed fully, acidity kept in balance, bitterness kept out of the cup. Profiles are refined batch by batch and recorded.

Roasting Fresh
Coffee is at its best in the weeks after roasting, not after months in storage. We import green coffee and roast in the United States in small batches, then date every bag so freshness is a fact rather than a promise.
